Whilst I love to cook, when it comes to midweek meal times more often than not I like to keep things quick and easy. Sometime last week it came to that time when I was thinking I really needed to go food shopping. You know that time of the week when there are just a few cupboard staples and an egg or two? Not having the energy or the will to hit the supermarket I scraped a few ingredients together to make this easy yet satisfying meal.
Ingredients:
Pack of 4 Hungry Joe's Kickin' Piri Piri Sausages
1 small onion roughly chopped
500g passata
spaghetti
Chop up the sausages and fry, don't add any oil as the fat will be released from the sausages. Add onion and cook until softened.
Whilst waiting for the onions to soften, cook the spaghetti as directed on the packet.
Once the onions have started to soften add in the passata and cook until thickened.
Drain spaghetti and serve.
You can't get much easier than this! What I love most about it is that the spicy oils from the sausages flavour the tomato sauce giving it an interesting kick, without having to faff around with any herbs and spices.
